Keto Banana Bread Muffins with Walnuts

Ingredients:

2 1/2 Cups almond flour

1 teaspoons Baking Soda

1/4 teaspoon Kosher salt

3/4 Cup Granular Sweetener

3 Large Eggs

8 Ounces Greek yogurt

2 teaspoons Vanilla extract

2 teaspoons Banana extract

1/2 Cup Chopped walnuts (Optional)

– Hey guys, welcome back to Low Carb with Jennifer. Today I’m going to show you how I make banana bread muffins and yes, they are keto. I can promise you they’re keto. Watch and see how we make these banana bread muffins. So let’s get started.

So like with all of my muffin recipes I start with almond flour, and I have since discovered that if you… I know there’s a lot of people that have an allergy to almond flour and if you want to kind of avoid coconut flour, you can go with sunflower seed flower. You can find it on Amazon, it’s ground up sunflower seeds and it measures one for one with almond flour.

So just a little tip for you. So we’ve got some almond flour here and I’m going to mix in our dry ingredients.

I’ve got some salt and this is baking soda and I’ve got sweetener, I use the granulated sweetener that is a one-for-one substitute for sugar. What I use is Lakanto but you could use Swerve. Dry ingredients are mixed so now we’re going to add in the wet.

We’ve got some beaten eggs, vanilla extract, and we’ve got banana extract, and I’ve got Greek yogurt but you could also use sour cream. My traditional banana bread recipe that I made before keto used sour cream and it’s delicious. So sour cream is a perfect replacement. I actually like Greek yogurt. It has less carbs than almond flour just.

.. Less carbs than almond flour, has less carbs than sour cream. Ooh, this is smelling banana-y. I’m also going to stir in some chopped walnuts cause I love walnuts in my banana bread, and this batter is ready to go.

So, I’ve got lined a muffin tin here. You could also make this in a loaf pan. Just pour the batter in a loaf pan, a greased loaf pan, and cook it for about 45 minutes to an hour. I like to make the muffins. So I’ve got a lined muffin tin and I’ve got the liners sprayed so they don’t stick, and I know they say don’t eat raw cake batter but I tried it and it’s delicious.

So I’m going to scoop these out into my muffin tin. It makes exactly 12 muffins. I fill my muffin cups just about all of the way full. Okay, these are going to go in a 400 degree oven for about 15 minutes to 20 minutes. We will check them with a toothpick and when the toothpick comes out clean they’re done!

Okay, her are our banana bread muffins out of the oven and they look amazing. They smell amazing, they smell just like banana bread. They look so fluffy and delicious and I will see you guys later.
