Ingredients:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 2 tsp baking powder
  • ¾ cup softened butter 
  • ¾ cup powdered sweetener of choice (use ½ if using erythritol)
  • 4 eggs room temperature
  • 1 tsp cinnamon
  • 1 tbsp banana extract
  • ⅓ cup sour cream or coconut cream (for dairy free)
  • 1/2 cup chopped walnuts (reserve some for the topping)
  • Pinch of salt

Our banana bread is finally set and look at how gorgeous it looks. I wish you guys could smell this. Okay, so before we start mixing all of our ingredients, just make sure that your oven’s preheated to 350 degrees. Okay, so in here we have our almond flour. So it’s just fine almond flour. What I’m going to do is mix all of our our dry ingredients.

First, coconut flour, a little cinnamon mmm, I love cinnamon, and then we have our baking powder. I always like mixing um the dry ingredients first because you want the baking powder and sweetener and everything to get well divided into the almond flour.

We’re going to focus on our wet ingredients. Right now we have our grass-fed butter, coconut cream, our sweetener, let’s go ahead and combine all this, so that is our coconut cream.

This is just um: powdered, allulose, okay, so we’re just gonna mix everything on, i would say, like a medium speed until everything is just nice and creamed, um we’re going to start by adding one egg at a time. So I’m going to do one and start mixing by adding one egg at a time. Everything just um incorporates really well together and we add more air into the butter. Okay, so now everything is mixed together.

We’re gonna go ahead and add in our last little ingredient. This is one tablespoon of banana extract. This is the banana extract that I’m using I’ll leave it linked in the description below for you guys in case you don’t already have one at home. A little pinch of salt and we mix okay, so our wet ingredients are mixed. We have our dry ingredients here. Now we’re just gonna combine the two and we’re gonna use a mixer just to make our life easier.

So let’s go ahead and mix this together and out is gonna come our banana bread mixture. So we can’t have banana bread without walnuts (unless you’re allergic). I wouldn’t leave them out, but these we’re going to fold them in. We’re just going to add them right in, just fold them in and then of course, i’m still going to use them on top, because I mean I just love the crunch. It just adds to the texture you know and, as you guys can see, all that mixing made it nice and fluffy and airy, which is perfect. So now, we’re going to pour everything in and then I’ll try to make it look pretty, flatten it a little, we’re not letting a single little drop go to waste guys. This is like gold right here.

Now just smooth it out. Oh my gosh. Okay! So we have more walnuts, and let’s just top this and I’m not gonna – go skimpy on this guys, because the texture I feel like it adds just so much texture and character to the cake. Look at that! Like doesn’t it just look so beautiful and imagine once we pull it out?

Oh my gosh. I can’t wait for you guys to see this! We’re gonna get it into the oven, we’re gonna bake for about 40 to 45 minutes, but like halfway through we’re going to want to keep an eye on it, especially depending on like your oven um, because you don’t want it to to get like too toasty on top. So halfway through we’ll, probably put like aluminum foil, but I’ll show you what it’ll look like. So, let’s go. All right, guys we’ll be back so now that our banana bread has cooled, I would say for about 30 minutes to an hour, we are going to take it out.

Oh see, that’s why i love using parchment so easy, okay, so i’m gonna make this one nice and thick. What? Look at that texture inside! This is gonna be the best banana bread you’ve tried. I’m telling you right now! You guys have to make this. I mean, of course you have to be a banana bread lover like me, we’re about to do a taste test.

I don’t even know which one because they look so beautiful and i don’t want to mess it up, but we’re gonna have to. So, I’m just gonna go with this one in the middle. It’s calling my name. This is like total perfection right now. Okay, we’re gonna go in for the taste test.

I’ve been waiting for this all morning. Let’s go. Oh my gosh. This does not even taste low carb at all, like you cannot tell that this does not have banana in it. Crazy guys. This banana bread just melts in your mouth. It is so like the texture is just perfect.

It doesn’t taste low carb if you made this for family members that aren’t low carb, they would never even know. Like, I would never taste this and be like, “Oh, it doesn’t have real bananas in it.”
